I recently did a cake for a large family celebration and there was one person who was Gluten Free. My client wanted my spiced apple caramel drip cake which due to the fresh fruit content and mix of sugars doesn’t work too well with gluten free flours.
It seemed mean to leave out one person so I whipped up these Gluten Free Chocolate cupcakes and piped a generous amount of the same Caramel Italian buttercream as the main cake was iced in on top and then finished with a lovely drizzle of caramel.
I was very happy with the result and I know there was a fair few guests jealous of the generous amount of buttercream that came with these little beauty’s!
I don’t think anyone should be excluded due to their dietary requirements, so if there is a guest at your event we need to maybe do something a little different for just let me know!
